Purpose
This position is responsible for a section in the pastry dept. The specific position could cover the production for
GDR, the specialty restaurants or the night production. The Head pastry must be motivated and fully versed in the
confection of international and American pastry products.

REPORTS TO: PASTRY CHEF

OVERSEES: Asst. Pastry Cook

EXPECTATIONS
• The overall responsibility in towards pastry preparation and presentation including ice cream and petit fours fabrication.
• Must have advanced pastry background with a minimum of 5 years experience from international 5 star hotel or equivalent related establishment.
• Must be proficient in effecting tasks, speed a motivating factor.
• Required to maintain the station clean and sanitized according to USPH rules & regulations.
• Able to communicate and work within a close nit team environment.


JOB DESCRIPTION
• To prepare pastry items as per given recipes and instructions from the Pastry Chef. Depending on the assignment given will be required to work the night.
• Will work with the Asst. Pastry in the Pastry Dept or Specialty Galley.
• Duties include the cleaning and sanitizing of his/her working area and working utensils following the United States Public Health Rules at Regulations and all times
• Must be familiar with the Ship’s Rules and Regulations and participate in all required Safety Training Emergency Life Boat Drills.
• Will be assigned from time to time early morning standby in the galley for USPH purposes.
• Will be assigned from time to time to be on a late duty in the midnight buffet service if applicable.


ASSUMPTIONS
• Personality and Appearance: Must have a pleasant and courteous personality. Must be well groomed, and presentable.
• Age and Health: Minimum age should be twenty-three (23) years old. Physically fit and in good health, without any previous record of any medical problems, drugs and alcoholism. Must be able to lift up to 50 lbs (30 Kilos) on a daily basis and able to work a minimum of ten hours per day, seven days a week.
• Professional Experience and Education: Standard High School Education. Requires a minimum of three years in the profession (Quality Hotels or Restaurants).
• Communication and Language Skills: Must be able to read and speak English clearly in order to interpret documents such as recipes and manuals. Other languages are considered a plus.
• Work Ethic: Must be a serious professional and take great pride in his/her work. Adherence to the Company’s Rules and Regulations is a must for his/her success on the job.
